The much-anticipated Ellicottville Bake Shop (EBS) finally opened its doors this Thursday, March 14th, welcoming the community with freshly baked loaves of bread and pastries in their modern yet cozy atmosphere at 5 E Washington Street Suite 5A. Owners Corey and Jennifer Hogan have dreamed of opening a bakery for years, finding comfort in fresh baked goods and the experience they offer. They are proud to be a part of the Ellicottville community and look forward to serving locals and visitors alike.
Corey and Jennifer gained inspiration throughout their travels, as they visited bakeries around the world, gathering motivation to open their own. “I’ve always had a soft spot for bakeries,” says Corey. “There’s nothing like freshly baked bread, pastries, and a good sandwich.”
Their thoughts of opening a bakery started to become a reality when Corey stumbled upon the perfect location in Ellicottville. “I was looking to expand my law firm in Ellicottville when I found the building and knew it was meant to be. Ellicottville is the perfect location for a bakery like this and we’re thrilled to serve the community here.” The law firm (Tiveron Law) will be right next door, and 5 E Washington Street Suite 5A is now home to the Ellicottville Bake Shop.
Corey and Jennifer’s dedicated team, including Kevin Fisher, Bo Sunshine, Amanda Aacker, and Jeff Minner, have been polling the community to find out what people are looking for in a bakery. From menu items to store hours and offerings, the team has diligently listened to what locals want. “Our goal is to serve the community, so it’s essential to listen to what the people want. We have been and will continue to listen to the needs of the community and are always open to feedback.”
The bakery will open early at 6:30am, staying open through lunch hours until 3pm. “We asked, and people wanted a bakery open early so they could come before work or skiing.” Current days are Thursday-Monday, closed Tuesday and Wednesday, but days and hours may change based on feedback from the community. “We are open to changing things as needed, we’re here to serve so we want to do what’s best for everyone.”
The menu includes a wide variety of baked goods including artisanal baked breads, pastries, and breakfast sandwiches. The bread menu rotates daily, including Sourdoughs, Cinnamon Raisin, Baguettes, Rye, Honey Wheat, Brioche, and more. Pastries include muffins, croissants, scones, brownies, cinnamon rolls, cookies, tarts, Danish, and sticky buns will also rotate on a daily and seasonal basis. All items are baked fresh daily by Head Baker Mark Notarpole, Pastry Chef Katie Cummings, and several rising star assistant chefs, bakers, and cooks.
Initially, the menu will include a variety of breakfast sandwiches, with the possibility of lunch items in the future. “Initially, we’re focusing on breakfast, as that’s what the community has requested. We may expand the menu in the future depending on what people are asking for.”
EBS is focusing on supporting as many local vendors and farms as possible, with a rotating schedule throughout the seasons. “Not only are we looking to support local growers and vendors, but we seek to provide the freshest ingredients. It’s also important to us on a sustainability level.” The Bake Shop is currently sourcing from Valley View Farms, Eden Valley Creamery, Troll Bridge Farms, and more.
The ambiance of the bakery is cozy, fresh, clean and comfortable. “We want everyone to feel relaxed and at home here,” says Corey. There will be indoor seating for 30+ guests with a staff of 15-20 to readily meet customer needs. “We’re here for a quick to-go order on your way to or from work, or to relax and enjoy a cup of coffee and breakfast with friends.”
Corey is looking forward to being a part of the Ellicottville community. “We’ve already been so warmly welcomed, and we feel the excitement of the community amidst our opening. Our goal is to complement the current restaurants and bring a different bakery experience to the area. We’re looking forward to getting involved in the community and approaching this upcoming season with anticipation and excitement. We hope we live up to your expectations, and we want to hear your feedback.”
Ellicottville Bake Shop will be hosting several open houses over the next month to welcome guests to the bakery. “We’re looking forward to hosting many local businesses, including realtors, fellow restaurants, and shop owners over the next month at our open house events. We want to show everyone what we have to offer and welcome them to the bakery.”
