Buffalo native Anthony Petrilli is the Executive Chef at West Rose, one of the newer restaurants at 23 Washington Street in the village of Ellicottville. West Rose offers seasonally inspired cuisine and cocktails in a space that offers a comfortable setting for anyone to come and enjoy. Their dedicated staff welcomes guests and provides top-notch service for dinner and Sunday brunch.
The restaurant opened in late 2019 as the sister restaurant to The Grange Community Kitchen, which is located in Hamburg, NY. “We sought out to expand our restaurant family, style of hospitality, and cuisine,” says Anthony, and thus West Rose was born.
Anthony describes West Rose, as a “lively restaurant serving seasonal dinners and Sunday brunch. The restaurant was designed using materials and finishes to create a light and airy room where guests can feel relaxed and tended to. West Rose is both timeless and of its time. It also serves as a gathering place for the local community, tourists visiting Ellicottville, and is a destination for all of Western New York and the Southern Tier.”
The upstairs lounge opened in November and has been a spectacular addition to their space. “It allows us to diversify our style of service and offerings to our guests. With fun games, shareable menu and a large screen projector, our lounge allows guests to come upstairs, grab a drink, play some Big Buck Hunter, shuffleboard, or catch the game in a different setting than the downstairs restaurant.”
Anthony loves being a part of the Ellicottville community and has felt welcome as a newer member of the restaurant scene. “Without hesitation the Ellicottville community has been humbly welcoming and it has been a true joy to build relationships with the members of our town and surrounding areas. We really love how tight-knit the community is, and everyone has been so incredibly supportive throughout our first few years.”
Anthony’s favorite part of being part of the team at West Rose is having the chance to enrich someone else’s day. “I feel fortunate that everyday I’m granted the chance to enhance someone’s day, even if only for the time they spend with us. Being a chef and working in hospitality fulfills my nurturing nature and I find joy in bringing joy to others through food. We take a lot of pride in the way we can provide for our guests. Whether to serve a meal, a drink, share a laugh or assist in creating memories, it is not overlooked that the power of hospitality can be a binding agent for all of us; bringing us closer together as members of the same community.”
Anthony is thrilled to announce the expansion of their hospitality family into the brewing industry. “We are excited to launch our own brewery -Wayland Brewing. Located in Orchard Park, Wayland will follow our spirit of hospitality through the greenhouse inspired taproom to the refined event space and beer garden, with anticipated opening in summer 2022.”
