Have you heard of PersNikkity Pies Bakery? It’s a unique bakery in the Village of Falconer that you really should try. Once you try it, you will be going back for more. Read on to find out what it’s all about.
Falconer native Nikki Pierce started making pies years ago for Thanksgiving for her family, but she really wasn’t happy with how the pies turned out. For years she added and deleted ingredients, until she finally came up with a recipe that she was happy with. Around this time, her husband commented on how delicious her pies were and suggested she could sell them.
Then Nikki started making pies out of her home to sell. She told people about her pies on Facebook posts. She would sell them at “pop-ups” which were small stands set up at local shops and boutiques. She would make twenty to thirty pies and they’d sell out super fast. She continued this way for about two years.
Then in the spring of 2022, she bought the building at 9 East Main St. in Falconer, NY that was Peterson’s Meat Market many years before. She and her husband renovated the inside completely. Now it has a nice combination of vintage furniture and decoration, along with some modern décor. She opened for business in May of 2023. Nikki stated, “We have created a unique Paris type café that’s a little sophisticated, but cozy and comfortable for anyone that walks in. It’s unique to the Falconer area. I am grateful to have a space for people to come in, relax, and enjoy the bakery.”
PersNikkity Pies Bakery specializes in delicious and decorative home-made pies. Nikki uses her own home-made crust. All the fruits are fresh; not canned. She uses locally grown fruits when possible. There is a wide variation of flavors such as apple, cherry, blackberry, pumpkin, peach, strawberry, strawberry rhubarb and many more. Nikki rotates the flavors at times to please her customer’s palates. Her best-seller is the super berry pie, which is a mix of five different berries. They come in 9-inch pies, 5-inch mini pies, and 3-inch sweetie pies. Sometimes they offer a “flight” of four different mini pie flavors to try.
In addition to her pies, there are homemade cookies, brownies, biscotti, scones, cinnamon rolls, coffeecakes, and muffins. It’s also like a little coffee shop. She has a variety of coffee drinks, including her own unique blend of fresh cold brewed coffee as well as Dalahast Roaster coffee from Peterson’s Farms. She also has gourmet hot cocoa and teas. Towards the back of the bakery, there is a small section of items to buy, such as candles, mugs, and greeting cards.
Nikki’s bakery is a great success. She said it is in part because of her amazing staff, that she is very thankful for. She also prides herself in working with local agencies in helping to rehabilitate and revitalize the Village of Falconer.
Nikki is excited about the bakery and the positive feedback she has gotten from customers. One customer, Amanda Trout, was quoted as saying, “I never really liked pie before I tried Nikki’s pies. Now I love them, and I am a loyal customer. Her pies are so much different than other pies I’ve tasted.”
When asked how she got the name of her bakery, Nikki said, “My great Uncle Bob Olson had called me persnickety when I was a young because I was fussy about what food I ate.” Now PersNikkity means being fussy with putting time and energy into decorating and making her pies like works of art, and the spelling she uses includes her name as well.
PersNikkity Pies Bakery is open Tuesday-Friday from 6am-5pm, Saturday 8am- 4pm, and Sunday 8am-12 noon. You can find more information on persnikkitypies.com and on Facebook and Instagram pages.
