Pauline Viennoiserie (a French word, pronounced “vienn-wah-zeree”, which refers to delicious, delicately-layered pastry) is now offering very special pies and pastries at local farmer’s markets. At the Williamsville Farmer’s Market, which ends November 1st, and the Kenmore Farmer’s Market, which ends on October 26th, customers can buy mini gourmet tart cherry pies, apple pies, peach pies and grape pies, croissants, and other pastries, with gluten-free and vegan variations. The flavors of the flaky croissants in the mixed box include almond, cinnamon, pistachio and chocolate. The seasonal pie box contains four assorted fruit pies, and so does the gluten-free pie box, while the vegan box contains mixed pies and pastries. The breads include Shokupan, a milk bread loaf, and Honey butter toast.
The pies and pastries reflect both the baking expertise of a chef who took courses in baking and French pastry at a prestigious Le Cordon Bleu (French for ‘blue ribbon’) school, and the secret family recipe for pie dough that the chef, Warapan Kegler, requested from her mother-in-law, Pauline. After her passing, she honored her by renaming her company after her. “From what my weekly customers at the markets are telling me, I feel like I am succeeding”, said Kegler, “so I hope the word will spread and more people will get to try my products and unique flavors.”

“One of the compliments that touched me the most came from a customer who had just moved here from Paris”, she continued. “After tasting a croissant, they said it reminded them of home, and told me, ‘Please don’t stop doing this’. Since then, they’ve become one of my regulars.”

More Fun Facts: Island Park, which is at 5565 Main Street in Williamsville, right next to the location of the Williamsville Farmer’s Market, is a delightful park that offers beautiful tree-lined paths and views of the water, pavilions, a playground, picnic tables, and restrooms. Another beautiful park, Glen Park, is across Main Street, and is bordered by the Glen Falls waterfall on Ellicott Creek. Besides the falls and the creek, it offers beautiful views of little ponds, trees and flowers. The Main Street area between the two parks is full of different kinds of stores and restaurants.
