Charcuterie By Carrie recently launched last month, June 2025, offering a variety of artisanal cheese and meat boxesto the Chautauqua area. The brand is off to a solid start and its chic signature trailer can be found at many area events and festivals with charcuterie made to order.
Carrie Graham was inspired to start this business by her own weight loss journey. “I recently went through a major weight loss transformation,” explains Carrie. “In 2025, I revamped by eating habits and lifestyle, and found meats, cheese and nuts as my ‘go-to’ snacking foods.” Carrie posted pictures of her snack creations on social media, and friends frequently commented, impressed with her creative snacking.

Carrie saw the opportunity for a charcuterie business, and decided to take the leap. “I saw the interest and decided to go for it,” says Carrie. She found a horse trailer on marketplace, and tailored it to be a country chic vehicle to house her business. “I had a vision as soon as I saw it,” says Carrie. The trailer launched in June, and will be making appearances throughout Chautauqua County.
Charcuterie by Carrie offers handheld charcuterie options made fresh to order in three sizes: the nibble cup/small (meats and cheese on skewers), the mingle box /medium (2 meats, 3 cheeses), and the spread box /large (3meats, 4 cheeses). Larger boxes are available to feed larger groups, with the option to preorder; appreciated but not necessary. Carrie uses a variety of cheeses, pepperoni, salami, and prosciutto meats. Orders can be customized to meet customers dietary needs and preferences with gluten free and vegetarian options available.

The trailer can be found at various area events this summer including the Great Grape Country Craft Beverage Festival at the Chautauqua County fairgrounds (also on the cover of this week’s Villager) on August 2-3, the Comedy Festival in Jamestown August 9-10, and the Celeron Concert series on Wednesday evenings throughout July at the Lucille Ball Memorial Park. Charcuterie by Carrie will also be rotating through the Heritage Nursing Homes in Chautauqua on Thursdays in July with a portion of proceeds to benefit each homes’ activities department. All events are open to the public.
Charcuterie by Carrie is available for preordering for special events, including bridal and baby showers, birthday parties, reunions, holiday celebrations, celebrations of life, rehearsal dinners and more. Charcuterie by Carrie is also available to hire for onsite events as well. “I’ve been gratefully overwhelmed with the amount of interest I’ve received so far,” says Carrie. “I’m thrilled to be a part of people’s special events, and help make the day more enjoyable.”
Carrie is thankful for the support she’s received so far. “It’s been even better than I imagined,” says Carrie. “I’m so grateful the community has embraced my idea, and I’m excited for what this journey brings.”
