the community.”
Owner and operator Matt Dinger opened Truffle Honey in May 2023. During his time living in Pittsburgh, Matt had visited the area several times, and fell in love with the Chautauqua region. “It was always a welcome retreat from the busy city life,” recalls Matt. “I loved visiting and began to look for property in the area.” While coming up on the weekends to Lakewood, he acquired the restaurant property in Mayville.
The goal of Truffle Honey was to offer a casual fine dining experience to appeal to a wide variety of guests. “With our restaurant’s location in close proximity to the Chautauqua Institution and Camp Chautauqua, we wanted to appeal to both crowds in order to best meet the needs of the community.”
Their food menu rotates seasonally and offers a variety of dishes including napoli-style pizza, wood fired wings, and truffle fries. All of the freshly butchered steaks and burgers are cooked on their wood burning grill, infusing them with a delicious smokey flavor. “Not only does our grill enhance the flavor of our dishes, but it adds to the ambiance. It provides a pleasant aroma and a comforting feeling to the restaurant.” The house-made dough, sauces, and freshly butchered meat and seafood make this place a must-try. Truffle Honey is an ingredient they make in house and is used sporadically throughout the menu on the pizza, wings, and whipped ricotta. The honey is locally sourced from Panama Bee Farm.
Their drink menu includes a sommelier curated wine list, craft beer selections (no domestic), and specialty cocktails made with agave-based liquor alternatives. All cocktail syrups are made in house, adding to the freshness of each sip.
Truffle Honey offers an elevated dining experience. The décor is chic, modern farmhouse. “It’s clean, fresh, and vibrant,” says Matt. The restaurant offers full table service, and takes pride in their warm approach to hospitality. “We want our guests to enjoy all this restaurant has to offer, from the food to the drinks to the service. We strive to provide an elevated experience in all aspects.”
The Filling Station, an outdoor beer garden space behind the restaurant, opened in May of 2024, offering 6 craft beer taps, small wine selection, sangria slushies and a small food menu that is slightly more casual, yet has the same quality and freshness. The food menu includes lobster bao buns, pulled pork bao buns, smoked jalapeño sausage, wagyu hot dog, whipped ricotta, and truffle chips. “The Filling Station offers an outdoor, laid-back space for guests to enjoy drinks and light fare during the warmer months.”
On July 5th, Truffle Honey will be holding their 3rd annual lobster boil. Tickets include 1 ¼ lb. Maine lobster boiled to order, andouille sausage, corn on the cob and roasted red potatoes for eat in or take out. “We love hosting this event,” says Matt. “The lobster is extremely fresh, and it’s something very unique to the area.”
Matt has enjoyed serving the Chautauqua community and loves watching guest’s responses to their experiences. “I’m proud to offer something different to the community,” says Matt. “We’ve created a unique elevated casual fine dining experience here in Mayville, and it’s been well received. We take pride in our presentation, quality and freshness. We love being creative, offering new food experiences and events to the area, and we’re grateful to the community for their support.”
